Käsespätzle bratwurst in a blanket

You're probably familiar with sausages in a blanket, also called sausages in a dough coating, sausage rolls or sausage rolls. Vienna sausages are often used for this popular finger food, which are then wrapped in puff pastry or yeast dough and baked until golden brown. But we make the hearty party snack a little more intense. For this recipe we use our Käsespätzlebratwurst , a bratwurst that has been refined with spaetzle, cheese and fried onions and gives the delicious snack a special kick.

If the classic recipe for sausage rolls with puff pastry is too boring for you, you should definitely try our version. For this you need sausages, dough pieces for rolls (you can find them in the refrigerated section), bacon, grated cheese and fried onions.

Preparation is very simple: Cut the dough pieces open from one side. Put a sausage in each and fill the remaining cavity alternately with cheese and fried onions. At the end, wrap the roll in bacon to close the opening. Now preheat the oven or grill. Place the sausages in the dough on the rack or the baking tray lined with baking paper and bake the bacon until crispy. Then remove the bacon and finish baking the rolls. The rendered fat from the bacon gives the dough a particularly crispy coating. Now just chop the bacon into small pieces and sprinkle it over the finished dish. The result is a perfect taste experience of juicy bratwurst with melted cheese in a crispy coating.

Of course, you can also modify this basic recipe however you like. Instead of using ready-made dough pieces, you can also make it with fresh yeast dough. If you don't want to use bacon, you can also brush the dough with beaten egg yolk and sprinkle with sesame seeds or more cheese, for example.

You also have many options when it comes to choosing the sausage. In addition to our cheese spaetzle sausage , Vienna sausages or other sausages are also suitable, such as the Franconian Bratwurst or our cheese Bratwurst, the Cheesy Gonzales .

We have many different bratwurst variations in our range, including this year's creative bratwursts: Käsespätzle bratwurst , Döner bratwurst and Pizza bratwurst . These three varieties are currently available as a sample package and you can vote for which bratwurst we should take to the Franconian Bratwurst Summit 2024. The winning bratwurst will then be permanently available in our range.
