A distinction is made between milk-fed lamb (six to eight weeks old) and fattened lamb (six to twelve months old). We source our meat traditionally from pasture-raised animals. The animals are not locked up in a stable, but have plenty of space to roam and move around freely. This is important to us for ethical reasons, but above all it affects the taste of the meat.
