    Roast pork – a classic

    If you love pork, then you are definitely a big fan of roasts. Fresh and delicious from the oven, it is a real German specialty. Pork belly is particularly ideal due to its high fat content. But parts such as pork neck (also known as neck or snout), pork loin, loin and shoulder are also good. With pork, all parts are used: the extremities, known as pork knuckle, shank or pork knuckle, are very popular in German cuisine. Larger pieces of roast turn out much better than smaller pieces. If there are leftovers, a cold roast is also delicious, or you can make a delicious aspic from it. Basically, pork must be cooked through, but it must not be dry. A very light pink core is ideal. The fat content already provides a large amount of protection, another indicator is the core temperature. The meat is tenderly pink on the inside at a core temperature of around 60 to 65 degrees, and the roast is cooked through at 70 to 80 degrees.

    The Schäufele – a Franconian specialty

    Roast pork is particularly common in Bavaria and Austria. Regional differences can be seen in the names: in Bavaria it is usually called pork roast, in Austria Brat'l. In Franconia, the Franconian Schäufele is a real speciality. It consists of the flat pork shoulder. The shape of the shoulder blade gives the Schäufele its name. The meat is fried with the bone. To do this, the rind is scored and seasoned with salt, pepper and caraway. Root vegetables, onions and a little meat broth as well as dark beer are also added to the roasting pan. After a roasting time of around two to three hours, the Schäufele is ready to serve.
