Our wild boar back fillet will keep for at least 5 days after arrival or collection at a maximum temperature of 6°C.
For optimal storage, we recommend storing between 0 and 4 °C.

We source our pork from the Nuremberg metropolitan region. To ensure the best possible quality and guarantee of origin, we slaughter our pigs at our uncle Hans Rössner's in Uehlfeld. He sources the pigs from farmers in his immediate area.

Wild boar is fortunately very rare or very clever here in Middle Franconia. That is why we do not always have wild boar, and here for example, back fillet, on offer. In addition, we only buy animals in the skin, which we then cut up ourselves. This means we can always guarantee our customers impeccable quality and freshness. We also get our deer and fawns exclusively from Franconia. We work with hunters based in Nuremberg, but that is not enough for us. We regularly drive to the game chambers in the Grafenwöhr region to get a larger amount of game. This means we can offer wild boar sausages and deer salami from our own production. This means we can also often offer you all cuts, such as the wild boar back fillet.

Wild boar fillet: extra tender and tasty

Game is one of the healthiest types of meat we can eat. The animals grow up in the wild and feed on it. The lack of animal transport and slaughter contributes to a very good quality of meat. That is why we do not buy game from driven hunts, but only from stand hunts. The back fillet of the wild boar is, alongside the inner fillet, the finest part of the whole animal. It is particularly tender and, depending on the season, has a spicier (summer), fruitier (autumn) or milder (winter) taste. Wild boars no longer have a closed season all year round. This only applies to young boars and deserters.

The following animals are hunted in Germany: red deer (e.g. stag), roe deer (deer), wild boar (wild boar), but also hares and birds (such as crows, wild ducks or pheasants). Hunters must ensure that they only hunt game that is in season at the time. Deer may generally only be hunted between May and January.
