Quick and easy enjoyment
To conjure up this delicious salad with roasted pumpkin, you only need a few ingredients: a small Hokkaido pumpkin, a bell pepper, sausages , pine nuts, thyme, olive oil and strawberry vinegar. First, halve the pumpkin and pepper, wash and remove the seeds. Then cut the vegetables into fine strips. Fry the pumpkin in a pan with a little olive oil until it is al dente. Alternatively, the pumpkin can also be prepared in the oven. To do this, preheat the oven to 200 °C. Then place the slices on a baking tray lined with baking paper, drizzle with a little oil and place in the oven. After about 25 minutes, you can take the baking tray with the baked pumpkin out of the oven. When the pumpkin is ready, roast the pine nuts in the pan. Then put the sausages in the pan and fry for 3-5 minutes on each side until golden brown. Cut the sausages into bite-sized pieces and place in a bowl together with the seeds and vegetables. Finally, mix a dressing with oil and vinegar and season with thyme, salt and pepper. Mix everything together and you can then arrange the salad on a plate and serve.

You can easily adapt this salad with baked pumpkin to suit your personal taste and keep changing it. How about walnuts instead of pine nuts, for example? Or you can use roasted pumpkin seeds as a topping. Feta or goat cheese in cubes also go very well with the pumpkin. A pomegranate is also a wonderful ingredient. It complements the fruity taste of the strawberry vinegar. A few leaves of rocket round off the nutty taste.
