We refine our animals!
You can get them all from us: Rare B and C cuts make you want more and are becoming increasingly popular. To ensure the availability of these fine cuts of meat, we have developed our own "perfect frost" principle. This means you always receive the cuts from our local animals in perfect quality.
This is how it works:
shock freezing
The animals are slaughtered, cooled to perfection, pre-aged and expertly cut up by hand. All meat cuts are then hung accordingly. When the ideal maturity is reached, the cuts are then packaged and then shock frozen.
What does shock freezing mean?
The Art of Storage
By using a temperature of less than -30°C, we achieve a freezing speed that prevents the formation of large ice crystals in the cells and thus does not damage the cell walls. When properly thawed, there is no difference to a fresh, well-hung piece of meat.
Frozen meat products should be thawed as gently as possible, ideally in the fridge overnight. If you want to store the cuts yourself at home, you must ensure that the transport from us to you takes place at a minimum of -18°C or colder or that it takes a maximum of 15 minutes to get to the freezer, otherwise the product will thaw and should not be frozen any further. If you need a cool bag or thermal box for transport, please let us know, we have the right equipment for you in stock.
