Freyberger's ham red sausage "Thuringian style"

Thuringian ham red sausage, or products from Thuringia, are subject to the regulation for geographically protected indications (PGI). This means that our ham red sausage is not an original Thuringian ham blood sausage, because it is not made in Thuringia, but in our headquarters in Nuremberg Sperberstrasse. But our lean blood sausage is in no way inferior to the original. Blood and rind mixture seasoned with pepper, mace and marjoram with a delicious lean pork ham filling, that is what sets our homemade blood sausage specialty apart.

What makes a ham red sausage or ham blood sausage so special

First of all, it is a blood sausage or red sausage. Like any other sausage of this type, the sausage mixture consists of freshly beaten blood, cooked, finely chopped pork rind and a little meat broth. This is seasoned with a spice mixture with a strong marjoram and peppery note. But the ham red sausage or ham blood sausage makes the filling special. Lean pieces of pork ham, about the size of a cherry stone, form the filling in the blood and rind mixture and characterize the special appearance of this artisanal food.

The seasoning of the Thuringian ham red sausage is very similar to our Nuremberg ham blood sausage. In general, the Thuringian spice note, which is influenced by the cultivation of marjoram and the world-famous Thuringian marjoram, is very similar to Franconian seasoning.

Freyberger's ham red sausage is an absolute delicacy for any snack. You can order the ham black pudding in slices or in one piece, depending on how you prefer your snack. But this Thuringian-style ham red sausage also cuts a fine figure in a sausage salad such as the Nuremberg Gwerch. Here, Nuremberg city sausage, meat sausage and onions are chopped up with the black pudding and dressed with vinegar and oil.
