    Ham is usually made from pork and often comes from the leg. It is then referred to as a hind leg ham. If the meat comes from the shoulder, however, it is referred to as a foreleg ham. If you like it particularly tender, we recommend our salmon ham, which is made from the pork loin and is of course made by hand by us. But it doesn't always have to be pork: beef ham is becoming increasingly popular and is mainly made from the leg of beef. The following parts of the leg of beef are usually used: the tail roll, bresaola (beef rump) and pastrami (beef brisket). The other pieces are then processed into other products, for example boiled beef or steak. This guarantees that nothing is wasted and that we can make real delicacies for your meat enjoyment from every part of the animal.

    Ham - what types are there?

    Basically, there are many different types of ham. How about the finest Serrano ham, for example, which originally comes from Spain and is air-dried for months after salting. This gives it its unmistakable taste. Another type is salmon ham: This is made from the back of a pig, then cured and finally smoked. Ibérico ham is also popular: Like Serrano ham, it comes from Spain and is made from pork. The animals for this ham are mainly fed acorns. Black Forest ham can only be produced in the Black Forest, has a dark color and a strong smoky aroma. Of course, there is also the classic cooked ham, such as our juniper ham, or ham for cold cuts, such as beer ham. But one important product cannot be left out of this list, namely Parma ham.
