We source our pork from the Nuremberg metropolitan region. To ensure the best possible quality and guarantee of origin, we slaughter our pigs at our uncle Hans Rössner's in Uehlfeld. He sources the pigs from farmers in his immediate area.

Our recipe for Kassler roast

Zutaten:

  • 1kg Kassler Hals
  • 5 Zwiebeln 
  • 3 EL Butter
  • 1,5 Liter Wasser 
  • 1 Prise Salz 
  • 1 Prise Pfeffer
  • Saucenbinder
Zubereitung: 

Heize den Ofen auf 180 Grad Umluft vor und zerlasse danach die Butter in einem großen, ofenfesten Topf. Brate deinen Kassler Hals von allen Seiten kräftig an und nimm das Fleisch danach aus dem Topf auf einen Teller.
Die Zwiebeln schälen, fein schneiden und in der Butter anbraten (bei Bedarf kannst du noch etwas Butter hinzugeben). Anschließend das Fleisch zurück in den Topf geben und das Ganze mit Wasser auffüllen, bis das Fleisch zu 1/4 bedeckt ist.
Den Topf zum Kochen bringen und zugedeckt bei mittlerer Hitze für etwa 60 Minuten im vorgeheizten Backofen zum Schmoren bringen. Den Braten nach ca. 30 Minuten wenden. Zu guter Letzt wird der Kassler Braten mit Salz und Pfeffer abgeschmeckt.
Nachdem du das Fleisch aus dem Sud genommen hast, kannst du mithilfe eines Saucenbinders eine leckere Bratensauce andicken. Schneide den Braten in Scheiben und serviere ihn mit den Beilagen deiner Wahl - fertig ist der perfekte Sonntagsbraten!
