a must on the Franconian snack plate

Presssack

One thing is a must on a Franconian snack platter: the Presssack! Whether it's "white" processed with curing salt, or "red" made with fresh pig's blood. A true Franconian will not be satisfied without it. Its name is derived from the traditional method of production. In order to ensure an even distribution of the filling, the tied sausages used to be stretched between two wooden boards. In our Presssack, only selected spices such as nutmeg, allspice, marjoram, cloves, cardamom and fresh onions are used, according to our own recipe.

Where does it come from?

Home slaughtering has always played a major role in Franconia's history. The pressed sausage is one of the original recipes for Franconian sausages. It dates back to a time when people were very good at processing the various "leftover pieces" of the animal into valuable specialties. Our "white" sausage still consists of rind and broth, as well as an insert of selected head meat, lean shank meat and some finely chopped liver. When producing our red, homemade Franconian pressed sausage, we do not use liver. Instead, the broth is mixed with fresh pig's blood. This gives it the beautiful, natural red color.

Der weiße Presssack super geeignet

Leider ist mir bei der ersten Bewertung ein Fehler unterlaufen und ich hatte nur 2 Sterne statt 5 Sterne vergeben. Leider ist es mir nicht gelungen diesen Fehler zu korregieren.
Ich liebe diesen Presssack mit Musik. Zwiebeln, Essig, Öl, Pfeffer und Salz mehr braucht es nicht.
