What does Kassler mean?

The question is not entirely clear, but in fact a connection between the cured meat classic and the Hessian city of Kassel can probably be ruled out. Legend has it that a master butcher named "Cassel" from Berlin was the inventor: at the end of the 19th century in Schöneberg, he came up with the idea of ​​marinating pork loin in brine. He wanted to make it last longer this way, as the salt draws moisture out of the meat. This in turn inhibits the growth of bacteria, which thrive in moisture and multiply. But the meat also tasted good and Kassler is now one of the classics of German cuisine!

Ich brate die vorgekochten Kasslerscheiben kurz scharf an und füge dann ne Dose gutes Sauerkraut dazu - Würzung je nach Laune, aber immer ein schnelles Gericht.
