Our semi-coarse Mettwurst will keep for at least 7 days after it arrives at your premises or is picked up, at a maximum temperature of 6°C.
For optimal storage, we recommend storing between 0 and 4 °C.

Mettwurst semi-coarse

When you think of raw sausage, you usually think of salami. But the term raw sausage encompasses so much more. In addition to the sliceable raw sausage, also known as salami, there is also the spreadable raw sausage. Examples of this are our fine , semi-coarse and coarse mettwurst , but also our onion mettwurst. There is also the group of raw sausages, here too we have a large selection to offer. Our Polish, smoked bratwurst, calf biters and our Saxon bratwurst fall into this category.

Storage and preservation of the Mettwurst semi-coarse

Raw sausage in general is one of the most unproblematic sausage products in terms of shelf life. This is due to two factors for all sausages. Firstly, the addition of nitrite curing salt. The preservative nitrite reliably inhibits bacterial growth. Secondly, the relatively low aw value is another guarantee of good shelf life. This is why raw sausages are divided into two main groups.

Spreadable sausage of the highest class: Our Mettwurst semi-coarse

Spreadable sausage is roughly divided into two classes: spreadable raw sausage and cooked spreadable sausage. Both types of sausage are delicious but fundamentally something completely different in terms of taste and production. Examples of our homemade spreadable raw sausage are the fine Mettwurst , the coarse Mettwurst and our semi-coarse Mettwurst as well as the tea sausage and pepper bags. But onion Mettwurst and our beef onion Mettwurst are also included. Our range of cooked spreadable sausage is also not to be sniffed at and is very extensive. This includes our classics, the delicatessen liver sausage fine and liver sausage coarse , but also our homemade truffle liver sausage and cranberry liver sausage are very popular with fans.

The cooked sausage spreads are almost always liver sausages. We make them with a very high liver content of around 25%. The liver sausage spreads are also made from pre-cooked ingredients, except for the liver, which has to be fresh in the sausage. Because it ensures that the liver sausage mixture remains stable. There is one exception, however: our onion spread.

Spreadable raw sausage is available in countless variations. With our Mettwurst, we rely on freshly made, creamy consistency and weekly production. Spreadable raw sausage is not intended for immediate consumption, but also not for long-term storage ( see guidelines for meat and meat products ). This means that it has a good shelf life, but not as long as sliceable raw sausage, such as our fine salami.

We only have a small selection of sliceable raw sausages, as we currently lack the space in suitable premises. Nevertheless, ourfine salami and raw Krakauer sausage taste excellent and are ideal for long hikes or when you are on the go.

Spreadable raw sausage

The spreadable raw sausages are not intended for immediate consumption, but also not for long-term storage. This is stated in the guidelines for meat and meat products . Translated, this means that this spreadable sausage, such as fine , semi-coarse and coarse mettwurst or our onion mettwurst, does not have to be eaten within a day, as is the case with a minced meat product (bratwurst mince), for example. But it cannot be stored for several weeks either. Our smoked bratwurst or Polish and Saxon sausages are classified in this group when delivered to our customers. However, if these raw sausages are dried well, they are very suitable for long-term storage.

Smoke has to come out. Or not?

Almost all of our spreadable sausages go into the smokehouse. Only our Leberwörschdla do not. The reason for this is the casing. Our Leberwöaschdla have a very long shelf life because the casing is very dense. This prevents bacteria or harmful environmental influences from getting to the contents. But the smoke also cannot get through this casing. Unlike, for example, with Mettwurst with cellulose fiber casing or our coarse liver sausage in the fat end. Here the smoke can do its job and contributes significantly to the outstanding taste of our Mettwurst coarse.

If you love Mettwurst, you don't count calories

Spreadable sausage is the sausage with the highest number of calories. Apart from our crackling fat ;). The fat is needed in the fine liver sausage to make it spreadable. With less fat it would no longer be a spreadable sausage. So be careful with reduced-fat spreadable sausages, because here the fat has to be replaced by something else, usually artificial. Enjoy your spreadable sausage consciously, then the extra calories won't matter much over the course of the day.

Die Wurst hat sehr gut geschmeckt. Meistens ist grobe Mettwurst entweder zu fettig oder zu stark geräuchert. Diese war nichts von beiden, sondern genau richtig.
