Our beef cheeks will keep for at least 5 days after arrival or collection at a maximum temperature of 6°C.
For optimal storage, we recommend storing between 0 and 4 °C.

We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

Braising, boiling or frying?

Beef cheeks are a highlight in every kitchen. But what is the best way to prepare this delicious piece of meat? To bring out the special taste of this tasty cut and to make the beef cheeks literally melt in your mouth, there is only one cooking method: braising.

In our butcher's shop, several cattle are butchered every week. As a traditional butcher's shop, it is important to us to carry out this step ourselves, because this is the only way we can say exactly where our meat comes from. This also gives us the opportunity to carry out the entire maturing process properly. Our beef is usually wet-aged. But what is special about us is that we dry-age our animals for at least seven days after slaughter and before vacuum maturing. This gives the so-called rump cap a special meat aroma and makes it wonderfully tender. Please understand that we can only deliver a maximum of 8 cheeks per week, provided there is nothing left from the previous week, as our beef cheeks are always freshly prepared. So it's worth being quick!

Die Rinderbacken waren nach 3 Stunden schmoren in Rotwein und Portwein butterzart. Musste nur wenig parieren, tolle Qualität des Fleisches.

Die Rindernbacken habe ich nach einem Rezept Schuhbeck zu einem Ragout für 10 Personen verarbeitet. Das Ragout war nach langer Schmorzeit im Bräter im Backofen butterzart und dank gutem Rotwein mit einer traumhaften Soße.
