Our beef fillet center piece will keep for at least 5 days after arrival or collection at a maximum temperature of 6°C.
For optimal storage, we recommend storing between 0 and 4 °C.

We only use heifers and ox meat. Never young bulls. Our cattle are slaughtered in the butcher's slaughterhouse in Fürth-Burgfarrnbach and come from farmers in the slaughterhouse's catchment area, mostly from the Nuremberg region. We sometimes even have personal contact with our fatteners in order to continually improve the quality of the meat and the way our animals are kept.

What is an A-cut? Simply put: all cuts that are referred to as quick-roast meat. These include beef fillet, roast beef , ribeye andbeef rump . These cuts are the most tender. We only use them from so-called heifers, i.e. female animals that have not yet calved. This beef fillet middle cut is one of the best cuts of meat because it contains the most exclusive muscle. A middle cut is particularly tender, mild in taste and is characterized by delicate marbling.

What does WetAged Beef Fillet mean?

Wet aging is the so-called wet aging of meat. Alongside dry aging, this is the most common aging method. The meat to be aged is aged in a vacuum in its own juice. What is special about us is that we let our animals, which we cut up ourselves, mature on the bone for at least 7 days after slaughter. This is particularly beneficial for the aroma and ensures optimal aging.

What can you use a beef fillet center piece for?

The beef fillet is a particularly fine and good piece. It is characterized by its tenderness and its special aroma, which meat fans love. Only the marbling is a little more sophisticated in other pieces.

What is the right degree of doneness for my fillet steak?

With the most tender muscle, the beef fillet, it is important that the piece of meat remains juicy. You should therefore cook your fillet at a core temperature between 50 and a maximum of 56 °C.
