What makes a juniper ham a special ham?

A hind leg is the highest quality of cooked ham. A ham of this quality can only be made from whole pieces of pork leg, the pork ham. Nowadays, most customers demand that their cooked ham be almost completely fat-free. This is why each piece is removed individually from the leg. Any fat and tendons that are attached are then removed. During the cooking process, the pieces are put back together in their natural position.

Juniper ham is gently massaged

All of our ham specialties are cured and thus receive their appealing, delicate pink appearance. The hams are massaged for at least 12 hours in a machine called a tumbler. This means that our hams are particularly tender to the bite. We rely on quality from Franconia. The pigs are slaughtered by our uncle Hans in Uehlfeld. Short transport routes guarantee the highest quality raw materials. This makes it a special product of the Nuremberg metropolitan region .

Extraordinary freshness of our juniper ham

At this point we would like to emphasize our outstanding freshness again. We produce cooked ham twice a week, and the hams are often still steaming warm when they reach the display. This special freshness is also what gives them their taste and their excellent shelf life.

Ich komme aus dem schönen Nürnberg und kannte Ihre Metzgerei noch von früher. Leider gibt es hier in NRW nicht annähernd so gute Wurst und Schinken. Wir sind sehr begeistert, daß wir die leckeren Schmankerl nach Hause senden können. Super immer gerne wieder
