Ingredients for 2 burgers

2 burger patties (180g each)
2 burger buns 2 slices of cheddar
1 onion
1 egg
2 potatoes
4 slices of Iberico bacon (alternatively fillet bundle )
60g flour
50g butter
100g clarified butter
75ml milk or cream
100g Gouda (grated)

  1. Peel the potatoes and then grate them using the fine grater on the food processor. Now season everything with salt, pepper and nutmeg.
  2. Now add 30g of flour to the mixture and stir. The egg is also now added to the potato-flour mixture. Now stir again.
  3. Now cut half of the bacon into thin strips and mix it back into the potato mixture.
  4. Melt the 50g butter in a small saucepan over a low to medium heat and then stir in the second 30g flour. Once this step is complete, you can add the cream and then the Gouda, stirring constantly.
  5. Fry the remaining bacon in a pan over medium heat. After turning the bacon, add the clarified butter to the pan and, as soon as it is warm, form the potato mixture into two balls and press them into the pan.
  6. Place the burger patties on the grill.
  7. Once both the bacon and the dough pieces are golden brown, remove them from the pan and pour out most of the liquid. Now fry the burger buns in the rest of the clarified butter.
  8. Once the burger patties have been turned, place the cheddar on the already grilled side and finish grilling the patties.
  9. In the meantime, heat the cheese sauce again slightly.
  10. Now the only thing standing in the way of you and your burger is the toppings.
